1. What is your favorite style of cooking? What about this style most appeals to you? "Home- style Vegan." While I am not a vegan, I love trying to make vegan food taste like something my mom would have made. It's such a challenge.
2. What are the top 3 cooking tips you would give a novice cook? I'm still a novice, but I have discovered that sharp knives are a great investment. They don't have to be expensive, just sharp. On that note, watch your fingers. Also, don't be afraid to experiment.
3. Who was the biggest inspiration for your career? Martha Stewart. She does it all from catering to media and marketing.
4. What do you enjoy most about being a chef? Trying something different and actually having it work.
5. How long have you been working in Staunton? Almost ten years.
6. What culinary advantage does Staunton have compared to other areas in the Shenandoah Valley? Staunton and Augusta County both have a wealth of rich soil and amazing agrarians that make this area one that is more unique than just about anywhere else in the United States. There is so much here that warrants culinary creativity.
7. What is your favorite food to eat? Macaroni and Cheese.
8. How would you describe what customers can expect at your restaurant? The Darjeeling Cafe offers a smile, fabulous service, a wide array of world class beverages including over 100 teas, beers, and wines, and excellent food that focuses on providing the areas vegans and vegetarians with plenty of options and culinary creativity, but also includes plenty of entrees for meat eaters. We want to make your dining experience an event.
9. Is there anything else you would like to share with us about yourself and your restaurant? This restaurant has been an incredible labor of love. I have put my heart into making the Darjeeling Cafe a place unlike any other in Staunton and I think that's obvious the moment you step into the door. Between my incredible staff and wonderful patrons we have carved a niche for creative, yet affordable cuisine in an environment that is inviting for the whole family.
